At the Ritz Paris, the culinary art embodies all three, as tradition and innovation combine in a subtle alchemy. It all began with Auguste Escoffier. First chef at the Ritz Paris in 1898, this pioneer of modern French dining gave his name to the cookery school of the same name. We have him to thank for the professionalization of haute cuisine and the creation of a guide that’s become the real chefs’ bible.

Since the moment it opened its doors, the Ritz Paris has been an impromptu theatre for socialites. From private dinners via fashionable tea dances to the most sumptuous receptions in France, our grand hotel has resounded with both great conversations and dancing feet. The celebrated Ritz bars have also witnessed a thousand anecdotes, with dynasties of the best bartenders always on hand as masters of ceremony, discreet confidants, and often friends.

The maestros of taste

The excellence of the Ritz Paris continues to evolve, guided by the talents of those who head up each domain. Jérôme Legras, Executive Chef of the Ritz Paris since 2019, oversees some sixty chefs. Eugénie Béziat, head Chef of the Espadon restaurant, welcomes guests at her Michelin-starred gourmet table. François Perret, Head Pastry Chef, adds his reputation to the classically French identity of the House. Florian Guilloteau, meanwhile, is in charge of wine for all the hotel's restaurants.
