Spend five days immersed in the kitchens of the Ecole Ritz Escoffier and perfect your pastry-making skills. From weighing to finishing, you'll learn how to master shortcrust, puff and choux pastries, to work with creams and cake mixtures, assemble desserts with fine precision, create impeccable mirrored glazes and shape decorations with piping. In small groups, under the expert guidance of our Chefs, you'll explore the balance of flavors and learn to revisit the grand classics of French patisserie.

A five-day deep dive

Alternating between technical demonstrations and guided hands-on practice, the unique format of the Summer class enables you to professionalize your method with advice from our Chefs, while enjoying a personally enriching experience. Delivered in French with consecutively translation into English, classes can be adjusted to your own pace as the week progresses. The program combines high standards with pleasure, so you can go deeper into your passion in a stimulating, friendly environment. It makes for a sugar-sweet immersion into the world of the professional patissier.

Courses are non-cancellable and non-refundable, but can be postponed up to 8 days before the scheduled date.
