Working alongside our Chefs amid the professional equipment in the Ritz Paris kitchens is a great way to inspire amateur pastry Chefs wishing to develop their creativity. This inspiring cooking class dedicated to prestige pastries is made to measure every time. Red fruits, lemon, almond, vanilla, coconut, chocolate, praline: the recipes on offer explore the full range of sweet flavors, depending on the season. Choose the theme and workshop length that suits you: a four-hour format to create a luxury cake, tart or dessert, or a one-and-a-half-day immersion to delve deeper into the techniques of great pastry-making, refining your technique and exploring every detail alongside a Chef from the Ecole Ritz Escoffier. Whichever class you choose, you'll have the opportunity to reimagine one or more pastries and turn them into signature desserts. You'll leave with inspiring ideas, new recipes and expert hands worthy of the greatest pastry Chefs. And don't forget a dessert to take away, to extend the experience and surprise your guests.

Haute couture finishes

High-end French pastry demands rigorously correct method and fine precision. It is distinguished by a respect for the ingredients and the richness of its flavors: the sweetness of chocolate, vanilla or praline, the fullness of a fruit or almond powder, the acidity of lemon... Whether for a classic recipe or an original creation, all ingredients are selected with the utmost care. Our Chefs will show you how to combine and work them to lift your cakes and pastries to the next level. In this pastry class, you'll learn how to make a cookie, a sponge cake, a pastry dough, a cream, a mousse, a filling, a gel or a glaze. You'll structure your creations by playing with textures, balancing layers, mastering spray finishing or working with chocolate, to take the pleasure of tasting to the very highest level. Each step is guided by a Chef from the Ecole Ritz Escoffier. Their goal is to convey the secrets of high-end French pastry and inspire you to revisit your own recipes at home.
